Carrot halwa is a favorite dessert of winters, made with freshly grated carrots, milk, and dried fruits. Carrot halwa is quite popular in India and often served as a dessert in marriages and parties.

Carrot Halwa

Gajar halwa or Carrot halwa is a very popular Indian dessert made with grated carrots, milk, and ghee. It takes a bit of time and frequent stirring but the end result is mouth-watering rich and delicious carrot halwa. Topped with loads of dried fruits and nuts, carrot halwa makes a wonderful dessert for festivals, marriages, and parties.

Ocassionally milk solids or khoya is sued to make the halwa more rich and flavorful. In this recipe I have used heavy cream instead but you can always use khoya.

Ingredients Needed for Carrot Halwa

  • Carrots: Fresh carrots make the most delicious carrot halwa.
  • Milk and Heavy Cream: I am using milk and heavy cream to make carrot halwa. You can skip the milk and use khoya/milk solids at the end of the recipe instead.
  • Dried fruits and Nuts: I have used cashew nuts, almonds, and raisins. Use your favorite chopped nuts and dry fruits.
  • Green cardamom: Freshly crushed cardamom or cardamom powder.
  • Sugar: Use sugar as per the sweetness of your carrots.
  • Ghee: Ghee makes the carrot halwa more rich and flavorful.

Can We Make Carrot Halwa Vegan?

Yes, ofcourse. To make the vegan carrot halwa, use any plant based milk and vegan butter. The procedure will be the same throughout.

How to make Carrot Halwa?

Step 1. Cook Carrots– Take a heavy bottom pan or open mouth kadhai and add grated carrots in it. Start cooking it on low flame. After a few minutes add milk to it.

Let it cook till milk and water from carrots evaporate. Frequent stirring is required. (it will take around 45 minutes). When all water evaporates add sugar to it. Now sugar will leave the water. Cook till the water from sugar evaporates.

Step 2. Add Nuts and Cook More– Make a hole in the center of the pan with a spoon, add clarified butter into this. Add cardamom and chopped or whole nuts in it. Stir and mix the ghee with halwa.

Add heavy cream and cook for another 5-7 minutes or until the separates from the halwa. Remove from heat, garnish with some more nuts. Serve hot after dinner or lunch. Store in refrigerator.

Serving and Storage

Serve the carrot halwa warmed with some more ghee. Pair it with your favorite meal as a dessert after lunch or dinner. I personally like it with a cup of tea or milk.

To store the halwa, use any container and refrigerate the halwa. It stays well for few weeks in the fridge and can be froze upto 1-2 months in the freezer.

Thaw the halwa overnight nad warm up with ghee before serving.

Pro Tips

  • Make sure to keep the heat on low medium as the carrots might stick to the bottom of the pan.
  • Use a heavy bottom pan to avoid sticking.
  • Stir the halwa frequently
  • Adjust the amount of sugar as per your desired sweetness.
  • If using khoya, cook the carrots until the water evaporates. Then add khoya and ghee and nuts. Cook till ghee separates from the halwa.
